As we were driving yesterday my husband says to me ‘you know what I’ve been craving for the past few weeks, your homemade chicken nuggets’. A few things. Yes it took him that long to tell me, a few weeks! You see, for me my thoughts come out as they’re being created in my head (read: not always good), but he never rushes to say things, a lot of internal processing goes on before his words enter this world. I could learn a thing or two from that! And another thing, he normally doesn’t crave food unless its chips from a packet or ice cream. While he loves & eats all food that I make here, I wouldn’t say he’s typically a foodie, he really doesn’t mind if food is boring…which is very unlike me. I LOVE food to be fun, interesting & exciting. So when he suggests something, I know it must have tasted good (enough to be remembered) and left him satisfied.

I would love to share this recipe with you too, as it’s a healthy version that also works well the next day for snacks (if you have any leftover!!). Oh and it has definitely been kid approved!

Healthy chicken nuggets recipe

Ingredients:

500 g free range chicken thighs, cut into 1-2” pieces
1.5 cups almond meal
½ cup arrowroot flour (tapioca flour)
1 tsp quality sea salt
1 tsp paprika
½ tsp garlic powder
½ tsp onion powder
Ground pepper
2 pastured eggs
Coconut oil for frying (or quality butter or EVOO)

Method:

Mix eggs in a medium bowl.
Mix dry ingredients together in another medium bowl.
Coat chicken pieces individually in egg mixture followed by dry ingredients.
Fry pieces in a frying pan coated well with oil of choice on medium/high heat, turn over when getting golden and repeat on the other side.
Serve with vegetables or salad of choice.
